Choc + Goji CRUNCH

THINK RICE BUBBLE SLICE OR LCM BUT WAYYYYY BETTER

The perfect amount of crunchy, with the perfect amount of chewy this no-bake slice is the quickest and easiest to whip up for a simple lunch box treat. Perfect Lunch Box.

Ingredients

  • 250g Dark chocolate (we loooove Solomon’s Gold)

  • 100g coconut oil

  • 1 packet Ceres organic “brown rice cakes with quinoa” - you will need to crush these up lightly using your hands.

  • 1/2 cup hemp seeds

  • 1/2 cup goji berries (or sultanas/raisins)

  • 1/2 cup of coconut or finely chopped nuts/seeds eg. hazelnuts, pumpkin seeds, peanuts (optional)

  • 1/4 freeze dried raspberries

  • 1 tablespoon vanilla (we love heilala)

How to whip these beauties up

  • Melt chocolate and coconut oil together, stirring until silky smooth.

  • In a large bowl place all the dry ingredients. Lightly toss together until evenly combined.

  • Pour melted chocolate mixture and vanilla over the dry ingredients. Mix until well combined.

  • Line a medium sized baking dish with baking paper and press into the lined dish.

  • Allow to cool in the fridge until firm.

  • Rest on the bench for 30 mins before slicing.

    NOTE: Once sliced, keep in an airtight container in the fridge. This will keep your slice crunchy and delicious.
